Verotoxin-producing Escherichia coli (EHEC) is a strain of E. coli bacteria that produces toxins known as Shiga toxins (verotoxins), which can damage the lining of the intestines. Infection usually occurs through consumption of contaminated food or water, particularly undercooked ground beef, raw produce, or unpasteurized dairy products. EHEC infection often causes symptoms such as severe abdominal cramps, diarrhea (which may be bloody), nausea, and vomiting. In some cases, particularly in young children and the elderly, the infection can lead to a serious complication called hemolytic uremic syndrome (HUS), which affects the kidneys and can result in kidney failure. Because of the potential severity, early recognition and monitoring of symptoms are important.
